Everyday Cooking {Product Review}
I love to cook. I also love cookbooks, cooking magazines, and cooking shows. But what I DON'T like are the zillions of recipes in those that I would never make in my home. They are too fancy, take too much time, contain ingredients I don't have, or use "from the box" ingredients I choose not to keep in my pantry. I love the more "average Jane" recipes--wholesome and healthy--with ingredients I have readily on hand, few packaged ingredients, and easy to make! I was recently given the opportunity to review the Everyday Cooking cookbook from Everyday Homemaking. I hoped that it would be a cookbook to earn its place in my already stuffed cupboard by meeting the criteria that I have!

I am so happy to say that I FINALLY (I'm sorry!!!) have a NEW RECIPE for you! I tried a recipe I found, but right away changed it up to fit our family taste. Lucky for YOU, I remembered to take photos of this delicious meal, and noted all my changes! So without further ado, here is a dish your family is going to ADORE--trust me. And if you like Chicken Pot Pie---but don't like the mess of a pastry crust, this recipe is definitely for you! Did I mention it's got some better ingredients too?? That makes it much lower in calorie count--another win!

Are you a meal planner? Do you get a nice printout and add in all your meals for a week or month? Do you have a meal plan shopping list? I don't. I am NOT a meal planner. I have tried it over and over, and we just agree to disagree. I just hate being tied down to meal plans. LOL. Well, I guess I'm more of a leftover planner. I cook a big meal and then plan how long we can eat on it. Bwahahaha. I LOVE the idea of having meals in my freezer, but I just don't have the desire or time to plan it all out. And if I did, I'm afraid it would just be bag upon bag of taco meat and spaghetti. Nothing exciting or different. Needless to say, I didn't have high hopes for my review of MyFreezEasy and their MyFreezEasy.com Freezer Meal Plan Membership. Planning ahead, cooking once for multiple meals, and spending a portion of a day just prepping meals just doesn't seem to be my style...or is it? Could this review have changed my thoughts meal planning? Is it actually JUST what a busy mom like me needs?

About MyFreezEasy

MyFreezEasy is the brainchild of Erin Chase, the creator of $5 Dinners. How Did I Use It?

Okay. As I said, I was initially skeptical, but I was willing to give it a try. I LOVE to cook and just having new recipes was worth it to me. So I logged into my account and just dove in. I read some of the information about the program to get an idea of the feel of it. I liked the idea that they would provide me with detailed shopping lists for every meal--making it quick to see what I had or didn't have. I liked the variety of meal plans--we eat a LOT of ground beef (hello! We are a BEEF farm), but I'm always left with maybe just three ways I cook it. I liked the idea of a whole meal plan JUST for ground beef. Slow cooker? Oh yeah. I ADORE my slow cooker, so meal plans for that were very appealing as well. Once I got a feel for it, I picked a plan--the September Ground Beef one. 

Looking at it, I determined that we probably wouldn't eat all the things on it, so I decided to take advantage of my Premium membership and change it up! To give you an idea on how that process works, I will show you in pictures for OCTOBER'S meal plans since they are handy--I clicked the top of the webpage for "this month's meal plans" and I have the links to each--and links to their labels.

I clicked on "All ground beef meals" and the pdf with all the recipes and prep instructions opens up...
After I open it up, I look through the recipes, and I know my family won't be very excited about a few of these. So I need to swap. I hit the back arrow and it takes me back to the previous page--scrolling down I find the button I need.
Now I simply click on the Ground Beef Meal plan again from the list that comes up and start swapping!

I simply drag the meals OUT of the meal plan box at the right, and then drag in the meals from the choices at the left. Notice that it is here I can change serving size too! Oh, but what if I decide that I really want a chicken meal in here too...? No problem. By clicking "search categories" there at the top, I can visit a different meal plan category and continue the process there until I have the choices I like. If I want to peek at the recipes before adding them, I simply double click and a little window comes up to show me the recipe. (LOVE IT!) Once I have my meal plan put together (you don't have to have exactly five meals--you can have less), I can now hit "review and print"...

Now I can again adjust my servings if I desire, but if everything looks good, I can print my meal plan--and print my labels. OR, I can email it to myself to deal with later! If I don't like something I see, I can just go back and hit "select recipes" and change things out until it's how I want. 

Once you hit print, it gives you a download of all the meals in your plan--and now it's off to the kitchen! The meal plans have a basic set up--
You will always get not just the recipes, but the shopping lists in detail, assembly prep instructions, and meal assembly instructions so you don't have to try to work it out on your own. 

Once I printed out my packet, I looked through the recipes to see how they are put together and I noticed something I REALLY liked--every recipe gives you directions for making it NOW and for prepping it to make later. This is important to me, because I have learned that my family is picky, and it's always wise to TRY a meal before freezing one for later. I actually learned that the hard way WITH MyFreezEasy. I did up a freezer bag for the Basil Balsamic Chicken. Turns out, no one really liked it very much. If I had made it first before freezing a batch, I would have learned that before wasting space in my freezer. Fortunately, I had only made one batch.

Just serve with salad and potatoes and bam! Easy meal!

I have made the Sloppy Dogs {Topping}, Black Bean Soup, Lazy Lasagna Bake, Basic Balsamic Chicken, Upside Down Nachos, and Slow Cooker Beef Stroganoff. In my freezer, I currently have two bags of Beef Stroganoff. I had Sloppy Dogs {Topping} and Black Bean Soup, but loved pulling them out to use them--when I needed to come up with two separate potluck dishes! 

My Thoughts


Okay, it's easy.
I am a believer. NOW I see why freezer prep meals are so loved by those who do them! They save all the time in the world on those nights when you are just too busy, or just uninspired to cook. Even though I am someone who LOVES cooking large meals for my family--I only make from scratch and do it nearly every day--there are nights I'm just too tired! Now I can just go to my freezer and pick from a meal that is there, knowing I have very MINIMAL prep to do when I'm ready to serve it! And let's talk about potlucks. Does your church do a lot of potlucks? Mine does. About once a month. I hate the "what on earth am I going to make??!" process that happens about 2 days before. This month, I just went to my freezer and pulled out Sloppy Dogs {Topping} for the one I knew there would be hotdogs at, and then the Black Bean Soup for the other. Easy peasy. I actually through them each in the crockpot instead of cooking it on the stove for even more simplicity!

Favorite?
The boys declare the Black Bean Soup to be the best so far. My oldest ate it 5 days in a row. Oh and speaking of that. One batch of Black Bean soup ended up making TWELVE bowls. A four serving recipe, served TWELVE bowls! That's fantastic! We've found that across the board, the 4 serving recipes are enough to feed us one night PLUS at least a lunch/dinner another day. 

Love-Of-My-Life has declared the Sloppy Dogs {Topping} to be his favorite so far. I LOVE that the recipe tells you to use the sloppy joe sauce in a can BUT also gives you the FROM SCRATCH recipe to make it yourself. YES PLEASE! It was soooo good! Everyone who had it at the potluck kept coming to tell me how good it was.

Are there any cons?
My primary con is that every chicken meal calls for BONELESS meat. I don't always have boneless on hand, and actually I find boneless costs more in the store. BUT as a cook, I know that the primary reason for boneless is the time it takes to make. It just takes less time. And there are some meals that just need it. BUT I would appreciate a note saying that boneless isn't always necessary for the recipe. 

There was also a case where there was a minor ingredient mess up, but I could easily figure it out--and I learned that the owner Erin Chase, wants all mess ups sent to her, so she can get them fixed.

I also wanted to mention--for those with food allergies, this meal plan really has you covered. There are meals for gluten-free, dairy free, soy free, vegetarian meals, Paleo/Whole 30...almost any diet you need to follow is able to use these meal plans and there are recommendations for changes on every recipe if possible. 

Now as for the 10 meals in one hour. It's true. Unlike many recipes, the cooking is minimal. So far the only cooking i had to do was just brown some ground beef before bagging it up. That doesn't take much time at all! I did 5 meals in about 25-30 minutes, so I am sure that 10 meals in 1 hr or less is accurate--especially if you follow the assembly directions to make it as smooth of a process as possible. My boys helped me out a couple days filling bags with things I had cut up and portioned out.

So...Will I Continue to Use this Product?
Absolutely! I have so much fun looking through the recipes, and it has taught me that planning ahead for my freezer isn't rocket science, and has given me more ideas on how to do it with some of our family favorite recipes I'm already making. And with the recipes provided, I already have been tweaking them to match our tastes--making them even more perfect for our family!

Would I Recommend MyFreezEasy?

Yes! At just $10 a month, it's worth having it all laid out for you. NO trying to come up with ideas on your own. The ability to create your own plans or tweak pre-made ones is fabulous. I love the shopping lists, the easy to assemble directions, and the labels! I truly will consider furthering my membership when it runs out because it has been eye-opening and very very helpful to me. I am a mom who LOVES TO COOK--yet I see how valuable something like this is, because I am also a very very busy mom. But I have time to prepare TEN freezer meals in 1 hr or less because that time saves me HOURS later during the week.

Did I mention she's in the middle of creating an app for your phone??! Hello! Even more time saving there!

So long story short, I was surprised at how much this program WORKED for me and my family and how it gave me a new way to think about meal planning. It's not about a menu for a month. It's about picking a day to prepare it all--so you don't have to do much later. And most of these meals ended up being the "dump and go" style which is a dream for me! I'm such a low maintenance cook. LOL. My family is really enjoying all these meals and we look forward to exploring more and more of them as I continue to fill up my freezer!

Tangy French Salad Dressing Recipe {Fresh from the Kitchen}

Earlier this month, I shared a recipe for Mom's Marvelous Honey Mustard Salad Dressing and I promised that I would also share our favorite Tangy French Salad Dressing recipe as well. This recipe was developed because "French" dressing is the only kind my husband will eat. We don't want to buy the various versions of it because the ingredients in most of them are simply dreadful for someone trying to go more organic, and organic versions cost an arm and a leg. So it was to the cookbooks I went. I found a version and we made it--but it was bland. So I started tweaking it as I always do. I finally found a combination of ingredients that creates a version he enjoys--it's actually kind of a mix of a traditional "french" dressing and its cousins "catalina" and "tangy tomato". So without further ado, here is my recipe for Tangy French Salad Dressing.

When it comes to salad dressing, I like to keep it simple. If I can't throw it all in a blender, give it a whirl, I don't want to be bothered with it! So none of my recipes need any fancy tools except a blender! In fact, you could just put it all in a mason jar and shake it! It would also work with any kind of salad dressing shaker as well.

A lot of salad dressing recipes call for fancy oils, but unless you have a personal preference for oils and want to use something difference, I always just use extra virgin olive oil in all my dressings that call for oil or salad oil. I have never had issues with flavor. Next in regards to vinegar. While you can use any vinegar really, I keep mine to either Red Wine Vinegar, Balsamic Vinegar, or Rice Vinegar. For this recipe, I have tried them all, and it tastes the best (we think anyway) with Red Wine Vinegar. I have also tried using different infusion versions of Red Wine Vinegar in it (pomegranate is my favorite version) and it's delightful. The only vinegar substitution I recommend for this particular recipe, would be plain white vinegar.

This is the time of fresh produce! We have salad and greens just coming out our ears here on the farm. We pick fresh every other day so salad is a part of nearly every meal right now. With our salad, we like to have fresh dressing to compliment the sweetness of the leaves. I don't like to buy dressing, because I have simply marvelous recipes. Our two favorites are Mom's Marvelous Honey Mustard Salad Dressing and Tangy French Salad Dressing. I decided it was time to share these with all of you so you can enjoy them too--beginning with Mom's Marvelous Honey Mustard Salad Dressing!

So here we go!

Mom's Marvelous Honey Mustard Salad Dressing

Ingredients:

3/4 cup salad oil (Extra Virgin Olive Oil)
3/4 cup vinegar (Red Wine Vinegar)
1/2 tsp. salt
1/2 tsp. paprika
1 tsp. dry mustard
Dash ground pepper (fresh if possible!)
1/3 cup. honey (raw if possible!)
1/2 tsp celery seed
1 tsp. garlic powder
1 tsp. onion powder

Put it all in a blender (or a quart jar) and give it a nice long whirl to get it all mixed up. I store mine in a salad dressing container or a mason jar. Both work perfectly fine.

Side note: I highly recommend you dip your finger and taste your final result. Depending on what type of vinegar you use, you may need to increase the amount of honey. When I make this exact recipe with Balsamic Vinegar, I end up having to increase the honey to 1/2 cup. 

Oh and this recipe is a FABULOUS marinade! I love soaking some chicken in it--especially overnight and then throwing it on the grill. Oh man. It makes the BEST chicken and then serve it with a fresh tossed salad! Super healthy and oh so fabulous.

Grandma's No-Fail, Super Easy, Always Delicious Cobbler Recipe

Summertime means berries. Strawberries, blueberries, gooseberries, marionberries, blackberries, raspberries...you name them, and they are ripe and ready for picking during the summer. Some of the best berries are the ones you find growing wild and if you are fortunate to live where they do, you can enjoy planning berry hunting trips. Here in Kentucky, we have wild blackberries growing all over the place--even here on our farm. As I was growing up, I grew to love all sorts of berries, because my Grandma had blackberries, raspberries, blueberries, and gooseberries on her property. LOTS of them. So our family was definitely a "berry" happy one!

When we get berries, I like to prepare them the same way my mom did when I was growing up--either freeze them whole, or make them immediately into a sweet, juicy cobbler. Everyone in my family back home knows how to make cobblers thanks to always having berries around--even the dads and uncles! And we all learned the same no-fail, super easy, and always delicious recipe passed down from the Cobbler Queen...Grandma herself.

Do you want to know why I prefer cobblers over pies? Because they are EASY and ANYONE can make them. There isn't any dough involved. Just fruit and a simple crust. Another reason I love cobblers, is because you can turn pretty much ANY fruit into a cobbler. But my favorite cobblers are made from peaches, apples, or berries. When I say anyone can make them...I mean it. My boys help me make them all the time and if I gave Little Britches the recipe, I am confident he could make it without any help at all from me. It's THAT easy.

So let's get started...

Step 1: Preheat your oven to 350 degrees. Grease your pan.
My cobblers are typically either a square pan, or a 9 x 13 pan. You will need double the ingredients for the larger pan. You can really make them in any size you want, I just happen to like squares and rectangles. LOL. Once you figure out your pan, go ahead and grease it (sides and bottom). You can use butter, oil, or my favorite--coconut oil.

Step 2: Prepare your fruit.

As I said, you can use about any fruit you want, but I have found that the best fruit, is the kind that makes a good syrup on it's own as it cooks. This is why I like berries and peaches most of all. You can use fresh OR frozen. Or you can mix fresh AND frozen. You can even used canned (I love home canned peaches in this recipe). I regularly use frozen berries. And have fun mixing them! My dad has this awesome cobbler he calls the "Blue Goose". He mixed blueberries and gooseberries for a fabulous sweet/tart treat. I like doing three berry cobblers myself with blackberries, raspberries, and blueberries. If I am making an apple or peach version, I will sprinkle cinnamon, nutmeg and/or cloves over the fruit once it's in the pan for an extra flavor boost.
This is about how much I use in a square baking pan. I would say 4 cups.
For a standard square or round pan, I use about 3-4 cups of fruit, double that for a 9 x 13. Obviously this is going to vary depending on the type of fruit you are going to use. If it's berries you might need more, but if it's apples or peaches, you might want less. I like to have about 1"-2" of fruit in my pan before I add the topping, so I am eyeballing it a lot. Make sure your fruit is washed, sliced, and ready to go--then just pour it into your greased pan, spreading it around so it goes from edge to edge.

Step 3: Prepare your crust.
One of the reasons this is an easy recipe is because of the measurements of the crust ingredients--just remember the number 1:
1 cup flour
1 cup sugar
1 tsp baking powder
1 egg

If you were making a 9 x 13, you could have it doubled, making it:
2 cups flour
2 cups sugar
2 tsp baking powder
2 eggs

Now I will add, that my mom chooses NOT to double for a 9 x 13 and just has a light thinner crust over it. I prefer the crust to cover my fruit, so I always double it--or at least add on another half. You can see how easy it is to increase the size of this recipe, and how easy it is to remember!

Mix all the ingredients in a bowl, stirring to get it into a crumby texture. It will not all mix up, but the majority of it will.

Step 4: Sprinkle your crust over the fruit.

Now it's easy--simply sprinkle your crust mixture over the fruit in your pan. I like to cover as much of the fruit as possible. Some people like to just make an "island" of sorts with the crust in the middle of the pan. There is no right or wrong way with this recipe. It will still taste delicious.
It's okay if your fruit shows, just cover most of it.
Step 5: Drizzle the top of the crust with butter or oil.

You can either melt butter (about 2-5 Tblsp depending on the size of your cobbler) to drizzle, or spray it with olive oil, OR my preference, drizzle it with coconut oil. Coconut oil just adds the best flavor with desserts. I use it all the time. It's also super good for you.

Step 6: Bake it for 30-45 minutes.
If your oven is preheated, then it's time to pop this beauty into the oven and let the magic happen. You want to cook your cobbler until your fruit is bubbling and the crust is golden brown. Apples sometimes take longer to bake to get soft enough, but rarely do I ever cook it longer than 40 minutes.

Step 7: Enjoy!
Once it is done, enjoy admiring the bubbling juices of your delectable fruit and savor the sweet aroma. Then dive in! It is a crime in our house to serve it without a scoop of vanilla ice cream. And the best part is you can spoon up some of those juices and pour it on top of your ice cream for a top to bottom treat! The cobbler crust gives it a nice little crunch, and the way the hot fruit melts the ice cream--yummy!

I hope that you will enjoy trying out this incredible recipe. It's so easy and so good! My mom tried this recipe out at a summer camp one year on a grand scale. She made a couple MASSIVE pans of it and those campers fell on it like ravenous wolves, were rapturous in their praise of it's deliciousness, and it became a camp tradition every year after. The more you make it, the more comfortable you will be playing around with different fruits for it, and I know you will be finding a family favorite before too long!

Summer time means that your garden starts producing tasty things for you to start incorporating into your daily meals! Things like corn, peppers, tomatoes, watermelon...and much much more! We always harvest corn and peppers so I'm always seeking out ways to use our harvest. This recipe for Green-Chile Corn is definitely a way to use up some of that corn--and maybe even some home canned chiles! I am spoiled by having a fantastic grocery store that has fresh foods year round. And if they don't have it fresh, they probably have it frozen. We are spoiled for that year round freshness. However, there is almost nothing to beat fresh-from-the-garden corn. I love it!

 photo New Mexico green chile flavor_zpskjuvnwsw.jpgI'll share a tid-bit with you, though. I like it even more when you add good, fresh New Mexico green chile. I am a NM girl, through and through. And there is a difference in taste to me when it comes to green chile. I want mine from Hatch or 505, if possible. If not, somewhere in NM.

Now, take those two amazing flavors and mix them together and you have my absolute, all-time favorite dish. Toss in a little cheese and it will be perfect. I have been known to eat that as my entire meal. And, I'll be completely satisfied. But, if that doesn't sound like a meal to you, try it as a side dish. It is just as good and complements any grilled main dish or roasted meat, such as chicken or fish, well.

Don't trust me, though. Try it for yourself!

Green-Chili Corn


Ingredients for 4 1/2 C servings:
*2 C fresh or frozen corn kernels
*1/4 C green chile **see note below**
*1/2 C grated cheddar cheese

Just mix these ingredients together, heat, and serve. You can add or reduce each ingredient to your liking. This is the combination that seems to please the most people, but the amount of heat in the green chile is known to vary widely.

**I prefer my green chile canned in a jar. It will be green chile, some lime, and maybe a little salt. That is all it needs. There are several brands from NM but I know that 505 will ship in the US and theirs is really good. You can get Hatch brand chile in a can in lots of places. There is also frozen green chile but that is a lot harder to find.

Fresh from the Kitchen: Lemonade (A Kid Made, Kid Approved Recipe)

Summer means hot weather. Hot weather means cool and refreshing drinks. Cool and refreshing drinks to me mean...FRESH MADE LEMONADE!! I adore lemonade during the summer, don't you? I am tickled to share a guest post today from a JUNIOR blogger, Miss L! Miss L's mom blogs over at At Home: where life happens, (one of my frequent blogs to read) and I was happy to have her daughter guest post with her favorite homemade summer yum, lemonade recipe today!

Lemonade is a fun, easy drink to make, and a lot of the ingredients are either easy to find at the store, or you already have at home. It's easy to make, and I usually only take about five minutes to make it. It's really tasty, too. I prefer no ice in mine, but to some people it's better with. Either way, lemonade is great!

To make your lemonade:


1. Gather your ingredients. You will need a two cup measuring cup, a pitcher, water, sugar, a spoon, and lemon juice.

2. I usually put all the liquid stuff in first, but you can do it either way. Put in two cups of water and about half a cup of lemon juice.

3. Put in the sugar. I do about one cup but this part really depends on how sweet or sour you like your lemonade.

4. Mix it up real good, until you can't feel the spoon grinding the sugar.

5. Pour into glasses and enjoy! This recipe makes about four servings of lemonade. At this stage, you can add a little extra lemon juice if you want to. This makes it a little bit more sour.

This recipe and how-to was written by the middle of the three giggly girls from their mom's blog At Home: where life happens. She is 9 years old and loves to dance, read, and be creative in a lot of different ways. You might find her writing poetry, creating doll sized items for her "girls", skating, scootering, or playing with her sisters. At any rate, lemonade is her favorite drink and she hopes you like it as much as she does.

Doesn't that look so refreshing? Her recipe is so simple, I bet your own children will enjoy making it! My boys love tossing in berries and smashing them in their glasses for an extra treat. We also pour our lemonade into our Popsicle holders for a frozen treat. However you make it, it will be a great summer treat!
